摘要： The physical properties of diacetin fats such as diacetopalmitin, diacetostearin, and diacetoarachidin, diacetobehenin are modulated by mixing them with about 10 % to about 16 % crystal modifier fats that are triglycerides bearing one short C2 to C4 acid residue and two long, saturated C16 to C22 fatty acid residues per molecule. The modified diacetin fats, which exhibit improved snap, gloss, hardness, bloom resistance, and mold release, are suitable for use in edible coatings, especially confectionery coatings.

摘要： A composition for use as a substitute for petrolatum and for surface treatment of confectionery, food products and surfaces which get in contact therewith as well as for external treatment of animals and plants comprises (a) oxidation resistant glyceride oil and/or liquid wax, (b) solid wax, which may be omitted if (a) comprises liquid wax, (c) structuring fat, and optionally (d) additions selected from crystallization inhibitors, hydrolysis inhibitors, food product ingredients, additives to food products, diet supplements, bioactive substances, cosmetic ingredients, pigments, and solvents. The combination of oxidation resistant glyceride oil, wax and structuring fat provides a composition with a semi-transparent, petrolatum-like structure having a high taste and smell stability, good gloss and anti-sticking effect, regulated adhesion and a very fine crystal structure. The composition is biocompatible by topical and oral administration and may advantageously be used instead of petrolatum and mineral oil based surface treatment compositions.

摘要： Reduced fat and calorie plastic shortenings are disclosed. The nondigestible portion of these compositions contain low levels of solids, yet still exhibit good passive oil loss control. These compositions also impart good organoleptic properties to foods prepared with them. Said low-saturate frying fat is particularly useful in confectionary applications and is comprised of about 40 % to about 80 % intermediate-melting fat, and about 20 % to about 60 % unhydrogenated or partially-hydrogenated base oil. If desired, said frying fat may also contain less than about 7 % fully- or substantially-hydrogenated hardstock having an iodine value of about 20 or less. Said intermediate-melting fat comprises from about 14 % to about 35 % C12-C18 saturated fatty acids; at least about 40 % trans-isomers of unsaturated fatty acids (by percentage of total fat); at least about 46 % of all double bonds in the trans-configuration; at least about 40 % solids (SFC) at 21.1 °C (70 °F); and has an iodine value of about 55 to about 75. Said base oil comprises no more than about 11 % C12-C18 saturated fatty acids and has an iodione value of about 75 or more.

Thus, protection against oxidation of the fatty product is accomplished and at the same time a suitable texture is imparted thereto.
