摘要： A meat product treated with a substantially tasteless liquid smoke and a method for treating meat to preserve the freshness and color without substantial smoke taste or odor is described. The method generally comprising burning organic material to produce smoke, removing substances in the smoke that impart smoke odor and taste to produce substantially tasteless smoke, dissolving the tasteless smoke in a liquid to produce tasteless liquid smoke and applying the tasteless liquid smoke to meat. The tasteless liquid smoke may be applied by injecting the tasteless liquid smoke into the meat, by immersing meat in the tasteless liquid smoke for an amount of time sufficient for the tasteless liquid smoke to diffuse into meat or by spraying the meat with the tasteless liquid smoke. The tasteless liquid smoke may also be applied by wrapping the meat with a material that is saturated with the tasteless liquid smoke.

The determination of the pH level of the smoked product provides an objective measure of the amount of smoke received by the food product, as well as an indication of the agreeability of the flavor of the food product. 摘要：　植物原料を燃焼、不完全燃焼又は熱分解して発生した燻煙を、２次加熱装置により加熱することにより燻煙の香りを改質する。特に燻製食品として、魚節を製造する場合、煮熟した魚を、その水分含量が３０質量％以下となるように所定の時間熱風乾燥し、乾燥後の魚を燻煙雰囲気下に保持して改質した燻煙成分を付着させる。当該熱風の温度は乾燥開始時の１２０°C以上から乾燥終了時の１２０°C未満へ低下させることが好ましい。本発明の方法により、食品に好ましい風味を付与し、ベンツピレン等の有害成分を低減することができる。特に、本発明の方法で製造される魚節は、魚の生臭みを発生させることなく短時間で乾燥し、且つ好ましい燻煙風味を短時間で付与することが可能である。

摘要： The invention relates to an apparatus and method for processing food products, such as fish, comprising: a food processing housing having dividing walls forming one or more chambers within the housing. A device is also present for supplying a processing media into the housing and at least partly re-circulating the media therein. Further a continuous conveyor belt extends through the housing from an in-feed area to an out-feed area. The conveyor belt is arranged to travel along a serpentine path within the housing, having plurality of parallel vertically extending flights and the product thereby transported there along through the housing. The conveyor belt is arranged with a plurality of carrying units. These units are elongated beams which the fish is threaded onto and transported thereon through the processing house.

摘要： Tasteless super-purified smoke is manufactured to treat seafood and meat to preserve the freshness, color, texture, and natural flavor, particularly after the food is frozen and thawed. The smoke is generated by burning an organic smoking material at preferably 500 to 800 degrees F. (260 to 571 degrees C.) in a smoke generator (1). It is then passed through a precipitation filtering tower (2) comprised of filters of ice, cloth, and activated carbon to remove taste imparting, and carcinogenic, particulates and vapors. The super-purified smoke is then stored and aged in a temporary pressure pot (3) or in canisters for treatment at the same time or at another place and time. The super-purified smoke is used to treat seafood or meat in plastic bags at temperatures between its variable freezing point 46 degrees F. (7.8 degrees C.) for twelve to forty-eight hours, or until the desired effect is achieved. The product is then frozen, stored for up to one year, and quick or slow thawed with little degradation of the treated seafood or meat.
