    • A cooking device include an outer housing (22) and a cooking cavity disposed within and separate from the outer housing (22). The cooking cavity accommodates a volume of cooking liquid therein. The device includes a heater (76) positioned adjacent the cooking cavity to heat the cooking liquid. A lid (20) is movably attached to the device and is used to form a seal with the cooking cavity. The lid (20) includes a transparent portion positioned along a top surface to enable viewing inside of the cooking cavity. A controller can be used to heat the cooking fluid for an amount of time designated by user input. A moving mechanism (42) can be used to move a food article into and out of the cooking liquid. The moving mechanism (42) can be automated. The device can include a drainage system for removing the cooking liquid.

    • The invention relates to a cooking device (104) and a method for operating such a cooking device, including a vessel for heating a cooking substance. The cooking substance is divided between a heating zone, transition zone, and a cold zone. A first heating element (106) is used to heat the cooking substance in the heating zone, and a transition zone heating device is used to heat the cooking substance in the transition zone. The transition zone heating device may be a pump (122) for introducing a mixing medium into the cooking substance in the transition zone whereby the cooking substance in the heating zone mixes with the cooking substance in the transition zone. The mixing medium may be air, whereby the cooking substance in the heating zone is turbulently mixed with the cooking substance in the transition zone. The mixing medium also may be a portion of the cooking substance withdrawn by the pump from the transition zone and then reintroduced to the transition zone, thereby creating turbulance in the transition zone. The transition zone heating device may also be a second heating element.
