    • A transfer mechanism for use in a continuous cooking system includes a non-metallic counter-balance having a contact bar located toward its uppermost end and a load located toward its lowermost end. The contact bar is sized to span a useable width of the belt and the load is sized to urge the contact bar into continued contact with a portion of the belt as the belt travels around the end roller. Means such as a rotational joint is provided for pivoting the counter-balance toward and away from belt, the joint being arranged to provide a predetermined amount of travel relative to the belt. Means such as a slot is provided for adjusting a position of the counter-balance relative to the belt. The uppermost product-contact surface of the bar can be round, flat, or angled and can include grooves to reduce the amount of contact area.

    • A forced hot air roller conveyor drying assembly is provided. It consists primarily of two parts; a roller conveyor for rolling cylindrical elongated food members while transporting them horizontally from one end of the conveyor to the other, and a hot air drying assembly for blowing hot air around the product as it is being rolled. The combined rolling of the product and the drying of the product helps ensure that the physical roundness of the food product remains nice and uniform while it is being uniformly dried. The forced hot air assembly may include a fan and heating elements, the fan directing warm air to the product rolling horizontally through the assembly and the roller conveyor may be comprised of a multiplicity of paired roller members driven by chain links, which chains are in turn driven by an axle engaging a drive sprocket.

    • A matchbox oven is disclosed. The matchbox oven includes a housing, a slider, a mover, a heat source and a blower. The housing includes a cavity having two openings. The mover moves the slider in and out of the cavity through the two openings. The heat source provides heat to the cavity for heating up any food item placed within the cavity. The slider includes multiple stoppers to serve as oven covers for preventing heat within the cavity from escaping through the two openings. The slider can also be utilized as a heat sink for lowering the cavity's temperature during oven operation. When a new cook temperature is substantially lower than the temperature of the cavity, the blower forces heated air within the cavity to exit through the two openings before the starting of and/or during the initial portion of a new cook cycle.

The food items are placed into the rotisserie broiler on a conveyor in a generally horizontal plane and automatically picked up by a conveyor in a vertical plane to be broiled and rotated adjacent to heating elements and then dispersed.
