摘要： The present invention relates to the preservation of foods, in which at least one kind of a natural antimicrobial agent selected from the group consisting of protamine, chitosan, and lysozyme to foods is added into the foods, and the foods obtained are stored in the presence of a deoxidizing agent under a substantially sealed condition. According to the present invention, the deterioration of foods by microbes, yeasts and the like which has not been sufficiently prevented by the use of conventional natural antimicrobial agents can be effectively prevented.
