摘要： A provolone cheese molding apparatus constituted by a fixed, horizontal table having a single circular hole within the table, a chute depending from the table and aligned with the circular hole, and means for pressing warm cheese upwardly within the chute. A slide on the upper face of the table reciprocates horizontally and includes spaced circular holes within the slide for selective alignment with the table holes. Cylindrical provolone cheese loaf forming tubes are vertically mounted to the slide coaxial with the holes and receive the cheese when aligned with the chute to form cylindrical provolone cheese loaves. The tubes are formed of lightweight light transmitting plastic, and each bears a plunger disc of a light contrasting color which moves with the cheese as it rises internally of the tube to indicate the extent of filling of the tube. The slide is shifted relative to the table and releasable clamping means are operated to release a filled tube which is then inverted with the plunger disc in place, and placed in a water cooling tank for cooling and solidifying the cheese loaf.

摘要： An apparatus for forming ice cubes mold means are provided having walls that define a plurality of separate cavities. A resilient, pliable empty bag is brought into engagement in a mold to be frozen and is placed in contact with the mold means. Preferably the mold means is comprised of two mold sections between which is sandwiched the liquid pliable package which because of its inherent resiliency and pliability the liquid filled package conforms to the shape of the cavities in the mold means. Passageways are provided that interconnect adjacent ones of the cavities so that the resulting frozen articles are connected to each other by readily frangible sections. In one form of the invention a reservoir is provided for containing the liquid to be frozen as well as a plurality of conduit means that are used for filling a number of the pliable packages positioned within the mold means. The reservoir may include a float that cooperates with a water inlet supply valve so as to maintain the liquid in the reservoir at a predetermined level. The reservoir is elevated with respect to the pliable packages and the mold means so that the water fills the packages by gravity feed.

摘要： A hoop filling unit has four stations, load, fill, press, and unload stations, and a rotatable turntable for moving a hoop sequentially through the four stations. The turntable includes four hoop carriers and is driven in a step-by-step manner to position a carrier sequentially at each of the four stations. A conveyor arrangement is associated with the load and unload stations and includes an automatic mechanism for moving an empty hoop onto a carrier plate at the load station and removing a filled hoop from a carrier plate at the unload station. A guide chute is positioned above each of the carrier plates and is connected for rotation with the turntable. The guide chutes are connected for vertical movement relative to the turntable and engage the upper edge of a hoop at both the fill and press stations, at the load and unload stations the guide chutes are raised to provide clearance for movement of the hoops onto and off of the turntable. Curd is delivered to the fill station where is it weighed and, when a predetermined weight of curd has been accumulated, it is discharged through the guide chute into a hoop positioned at the fill station. The just filled hoop is transferred to the press station where a pad is moved downwardly through the guide chute into the filled hoop to a level below the upper edge of the hoop. The guide chutes are supported from an enlarged diameter section of the drive shaft by four-bar linkages and each includes a raising and lowering mechanism which rides on an annular track having a raised portion and a lower portion to thereby lower the guide chutes at the fill and press stations and raise them at the load and unload stations. An indexing mechanism is provided to position the turntable and hoop carriers at each of the four stations and to lock the turntable in such positions when so located.

The curd is fused in the apparatus, which is configured to form a curd stack in a container that has a temperature comprised within a temperature range that favors acidification of the cheese curd in the curd stack. The formation of the curd stack compresses the cheese curd in the curd stack, which causes the curd stack to express whey as the acidification of the curd takes place and as the syneresis process takes place. The curd stack is subjected to a vacuum, which assists in the removal of air from the curd stack. The curd stack has a continuous casein matrix, which allows for a cheese block obtained from the curd stack to be milled into cheese curds, which have substantially similar dimensions and very few fines.

The apparatus comprises multiple, vertically arranged towers, a common curd distribution arrangement for distributing a curd and whey mixture into the multiple towers and a drainage section for draining whey from the curd and whey mixture. The drainage section forms a continuous space that extends horizontally over each of the multiple towers, each of the multiple towers having openings into the space formed by the drainage section for allowing whey to pass from the multiple towers and into the drainage section. A base unit beneath the multiple towers receives drained curd from the multiple towers and place the drained curd in moulds.
