    • A method of manufacturing multi-layered, laminated, lipid-based sweet confections comprises tempering the lipid-based formulation for each layer, and depositing them separately onto a moving conveyor belt, which is passed through a cooling tunnel between the station where the first layer is placed on the conveyor belt and the station where the next layer is placed. If more than two layers are to be made, additional stations are employed further along the conveyor belt. A set of fingers is located at each station so as to striate the layers as they pass beneath the fingers, so as to govern the width of each ribbon that is thus formed. The width of the fingers in each successive set of fingers is not greater than the width of the fingers in the preceding set. A mixer is arranged with a pump to inject discrete predetermined quantities of a syrup additive which at least has a color component and which may also have a flavour component, into the center of a stream of tempered formulation for at least one of the layers as it is being fed into the mixer, so that upon exit from the mixer the formulation has at least a different color than the formulation for each contiguous layer of the confection being formed.

    • A dual deposit stencil apparatus for discharging filler materials onto parallel lanes of base cakes comprises a stencil tube having two inlet openings, one communicating with a source of first filler material, and the other communicating with a source of second filler material. The stencil tube has four discharge openings therein. A stencil carried on the stencil tube has pairs of openings therein for receiving two filler materials. Provided in the stencil tube are a first shutoff valve and a second shutoff valve. First and second actuating mechanisms control the shut off valves and are coordinated to simultaneously provide first and second filler material to each pair of openings in the stencil. A wire mechanism cooperates with the stencil for simultaneously removing the first and second filler materials from each pair of openings.

    • An icing dispenser having an expandable elastic reservoir on the handle proximal end which when loaded expands a reservoir bladder under an elastic bias that tends to return the bladder to its unexpanded condition, therein uniformly impressing constant pressure on the icing within the reservoir. A reservoir neck extends from the bladder through a handle passageway to a decorator icing tip. A butterfly valve within the reservoir neck modulates an amount of icing flowing through the tip with butterfly ends angled parallel to the passageway and urged into the pliable neck at a preferred angle, slightly deforming the neck to effect a valve seal. The handle is adapted for operation in an operator's fingers as a writing instrument with icing extrusion modulated by a lever on the handle being adjusted relative to the handle by the fingers.

    • A system and method of ultrasonic rotary forming food products is provided. The system includes a first ultrasonically activated rotary wheel including a first cavity for receiving a food product and a second rotary wheel. The first ultrasonically activated rotary wheel and said second rotary wheel rotate such that food product within the first cavity contacts the second rotary wheel to form an individually-formed food product. The food product passes from the first cavity to form a single formed food product. The system also includes a food product delivery system for delivering food product to the first ultrasonically activated rotary wheel and the second rotary wheel. The second rotary wheel may also be an ultrasonically activated rotary wheel having cavities formed on the outer circumferential edge of the wheel. The food product delivery system may include a single food product delivery tube that simultaneously delivers food product from the same stream, droplet, or line to both rotary wheels. Alternatively, the food product delivery system may include a first hollow tube delivering food product to the first rotary wheel and a second hollow tube delivering food product to the second rotary wheel.

    • A method of producing an edible product of the sweets industry includes the steps of filling a liquid sugar mass into a mold to only partly fill the mold, the mold at least partly being made of an elastic and resilient material and including a wall, displacing the liquid sugar mass along the wall of the mold by a stamp element, and solidifying the sugar mass between the stamp element and the wall of the mold to attain a solid hollow body. The solid hollow body may then be filled with at least one additional mass to attain an edible product of the sweets industry. Finally, the product is ejected from the mold by at least partly reversing the elastic mold. The apparatus for producing the product includes at least one mold at least partly being made of an elastic and resilient material, at least one stamp element to temporarily dislocate sugar mass contained in the mold, and at least one supporting mold to support the mold from below at least when the stamp element dislocates the sugar mass contained in the mold.
