    • Beta-fructosyl-L-ascorbic acid and a preparation method thereof are provided, which acid has improved stability against oxidation, and physiological activity such as antibiotic and skin whitening, so that the acid is useful in cosmetics, food and medicines. The beta-fructosyl-L-ascorbic acid represented by formula (I) is provided, wherein n is an integer of 0 to 10. The method for preparing the beta-fructosyl-L-ascorbic acid represented by formula (I) comprises the steps of: (1) culturing a microorganism producing fructo-transferase in a medium containing beta-fructosyl polysaccharide as a main component, centrifuging the cultured medium to remove cell pellets, and precipitating the centrifuged solution to prepare crude fructo-transferase solution; (2) dissolving ascorbic acid in a buffer solution containing beta-fructosyl polysaccharide to regulate pH to 4.5 to 7.0, adding the fructo-transferase into the buffer solution and reacting them under dark condition to prepare beta-fructosyl-L-ascorbic acid at 25 to 50 deg. C for 3 hours to 5 days; and (3) purifying the beta-fructosyl-L-ascorbic acid, wherein the beta-frultosyl polysaccharide is levan, inulin or a mixture thereof.

    • PURPOSE: A cosmetic composition containing polysaccharides(levan) separated and purified from a microorganism is provided which has excellent improving effect on skin elasticity, reducing effect on the depth of skin wrinkles and moisturizing effect on the skin. CONSTITUTION: The cosmetic composition contains 0.1 to 10% by weight of a microorganism-induced levan. The levan is prepared by the steps of: culturing a levan-producing microorganism in a culture medium containing sucrose and a yeast extract; filtering or removing a strain to produce a solution containing polysaccharides(levan); adding alcohol to the solution, followed by precipitation and drying. The microorganism is selected from the group consisting of Rahnella aquatilis, Zymomonas mobilis, Pseudomonas aurantiaca, Pseudomonas syringae, Gluconobacter oxydans, Aerobacter levanicum, Bacillus amyloliquefaciens, Bacillus polymyxa, Bacillus subtilis, Corynebacterium laevaniformans, Erwinia amylovora and Streptococcus salivarius.
