    • PURPOSE: A manufacturing method of a semi-dried mulberry is provided to improve color stability of C3G pigment by hot air drying the mulberry under a specific condition. CONSTITUTION: A manufacturing method of a semi-dried mulberry comprises a step of mixing sugar and mulberry; a step of adding citric acid into the mixture, measuring at 20-25 °C for 5-30 days, and separating the mulberry; a step of obtaining 35-45 wt% of a semi-dried mulberry by hot air drying the mulberry at 35-38 °C for 24-30 hours. The mixing ratio of the mulberry and sugar is 1:0.5-2. The use amount of the citric acid is 0.2-0.3 wt% based on the total weight of the mixture.
