    • A process for producing a concentrated red pepper (I) extract which keeps good quality in color and taste comprises (A) drying (I) with heat or air to 7-8% water content, (B) grinding to 10-20 mesh size of (I) fillets, and absorbing water with nozzle spray or steam, (C) extracting (I) fillets on 50-80 mesh screen with recycled hexane or ethanol to complete discoloration of (I) in apparatus of Fig. 1, and (D) filtering or centrifugating at 5000-10000 rpm for 10-30 min in continuous process, and concentrating the extract. In the process of (C), the solvent is filled to 1/3- 1/4 of height of fillet packed as ratio of fillet to solvent= 1:3-5, the 1st extraction is for 2-3 hrs and thereafter concentrated in vacuo, and for the 2nd extraction new solvent is used for 1-1.5 hrs. Also the extraction temp. is 30-38 deg.C in hexane and 60-70 deg.C in ethanol.
