    • PROBLEM TO BE SOLVED: To easily purify xylose useful for various kinds of foods, etc., at a low cost by mixing a xylose-crystallizing mother liquor with crude crystallized xylose with stirring, and subsequently separating the produced crystals from the crystallizing mother liquor without passing through a process for perfectly dissolving the mixture. SOLUTION: This method for purifying xylose used for various kinds of foods, etc., comprises mixing and stirring a xylose-crystallizing mother liquor with crude crystallized xylose having a xylose purity of >=80 wt.% so as to give a solid concentration of 65-80 wt.%, separating the crystallized xylose from the xylose-crystallizing mother liquor without passing through a process for perfectly dissolving the mixture, mixing and stirring the obtained xylose- crystallizing mother liquor with crude crystallized xylose, separating the crystallized xylose from the xylose-crystallizing mother liquor without passing through a process for perfectly dissolving the mixture, and further repeating the above operations. Thereby, the purity of the crystallized xylose can be enhanced, and the by-production of the xylose-crystallizing mother liquor low in utilization value can be reduced.

    • PROBLEM TO BE SOLVED: To produce the subject compound useful as a raw material for foods, medicines, cosmetics, etc., at a low cost by catalytically hydrogenating a syrup containing a specific amount of maltose in a solid material, then repetitively chromatographically separating and purifying the resultant product and then carrying out the spray-drying, etc., of the purified product. SOLUTION: A syrup containing 40-75wt.% maltose in a solid material is catalytically hydrogenated to provide a sugaralcohol syrup, which is then chromatographically separated in a cation exchange resin column to afford a fraction containing a large amount of sorbitol, a maltitol-containing fraction (A) containing 80.5-86.5wt.% maltiol and a polyol fraction having >=3 polymerization degree. The resultant fraction (A) is then passed through a cation exchange resin column and separated into a sorbitol- containing fraction, a maltitol-containing syrup fraction (B) containing >=97.5wt.% maltitol and a polyol fraction having >=3 polymerization degree. The separated fraction (B) is further concentrated and then crystallized to provide crystal maltitol and the mother liquor containing >=90wt.% maltitol. The mother liquor is subsequently spray- dried or cooled and kneaded in the presence of a seed crystal to afford the objective molasses-containing crystal.
