    • PURPOSE:To obtain economically a high-purity milo coloring matter, by treating a milo coloring matter-contg. substrance with an aq. alkali soln. and adjusting the pH of the resulting aq. extract contg. said coloring matter to selectively precipitate it and to remove water-soluble impurities. CONSTITUTION:Milo gluten or a milo coloring matter-contg. substance obtd. by treating it, is added to an aq. caustic alkali soln. having a concn. of 0.1% or higher, pref. 2-10% in an amount of at least 5 times, pref. at least 7 times that of the milo gluten. Extraction is conducted at 45 deg.C or higher, pref. 55- 65 deg.C for 0.5-3.0hr. After extraction, the gluten is removed by filtration or centrifugal separation to obtain a reddish brown extract. The pH of the extract is adjusted to 4 or lower, pref. 1-3 by the adddition of an inorg. acid such as conc.hydrochloric acid. The milo coloring matter is separated as a precipitate. Then a sodium carbonate soln. having a concn. of 0.2% in an amount of 5- 10 times that of the extract is added thereto. Extraction is conducted by heating the mixture at 80 deg.C for an hour. After extraction, the pH of the extract is adjusted to 3 with an inorg. acid to obtain the milo coloring matter.
