摘要： PURPOSE:To synthesize a saccharide mono-fatty acid ester in a short time in high synthetic attainment ratio by blending a specific fatty acid with a spe cific saccharide such as monosaccharide and carrying out enzymatic reaction using thermostable immobilized lipase in the presence of an organic solvent. CONSTITUTION:6-22C saturated fatty acid such as caproic acid, an unsaturated fatty acid or an ester such as methyl caproate of the fatty acid and 1-3C lower alcohol such as methanol is blended with a saccharide selected from 5-7C monosaccharide such as arabinose not containing a substituent group, disaccharide comprising a hexose such as aldose and 4-6C sugaralcohol such as erythritol and enzymatic reaction is carried out using thermostable lipase derived from immobilized Candida antarctica in the presence of an organic solvent such as benzene. Then, after the reaction is over, a saccharide mono- ratty acid ester is separated and collected from the reaction product by a conven tional procedure. Consequently, the saccharide mono-fatty acid ester is separated and collected from the reaction product can be synthesized in high synthetic attainment ratio, in high content, industrially and advantageously.

摘要： PURPOSE:To obtain a fatty acid ester in high reaction ratio and a short time by dissolving specific saccharide in an organic solvent heated to prescribed temperature and containing no water and reacting the saccharides with fatty acids using a lipase at the above-mentioned temperature. CONSTITUTION:Saccharides (e.g. glucose or sorbitol) selected from 5-7C monosaccharides having no substituent group, disaccharides consisting of hexose and 4-6C sugar alcohol are dissolved in an organic solvent (e.g. toluene) containing no water heated to >=60 deg.C. Fatty acids (e.g. stearic acid or methyl laurate) selected from 6-22C saturated and unsaturated fatty acid and ester of the above-mentioned fatty acid and 1-3C lower alcohol and lipase (e.g. heat resistant lipase) are further added to the solution. Then these saccharides are reacted with fatty acids at >=60 deg.C by enzymatic reaction by lipase to provide the saccharide fatty acid ester.
