SOLUTION: At the terminal end side of a baking mold circulating line 2 of a confectionery production equipment 1, a peeling device 5 is provided which moves a peeling plate 8, having through-holes 8a and capable of housing a soft rice-cracker dough C having been baked into a thin disk, so as to draw a circle in contact with the surface of a lower mold 3a of a baking mold 3, and peels the soft rice-cracker dough from the lower mold, and also a pinching device 6 is provided which immediately forms the soft rice-cracker dough into the folded wattle hat like-form by pinching the soft rice-cracker dough with a pair of pinching claws 39, 40 having on the lower end inside surface projections 39a, 40a of almost triangle shape.
