    • PROBLEM TO BE SOLVED: To provide a method for producing filamentous fungus induced with acrylamide-decomposing function and the filamentous fungus obtained by the method. SOLUTION: This method for producing the filamentous fungus induced with the acrylamide-decomposing function is provided by culturing the filamentous fungus in an acrylamide-containing medium under the condition of pH 7.5 to 11.0. The method for producing immobilized filamentous fungus induced with the acrylamide-decomposing function is provided by comprising the following processes: (a) performing pre-incubation of a carrier with a nutrition source-containing medium, (b) culturing the filamentous fungus in a medium containing the carrier, and then (c) culturing the immobilized filamentous fungus on the carrier under the condition of pH 7.5 to 11.0 in the acrylamide-containing medium.     • PROBLEM TO BE SOLVED: To provide an antioxidant composition having an excellent antioxidant action, a composition inhibiting activity of disaccharide hydrolase, having an excellent action of inhibiting activity of disaccharide hydrolase, a composition for intestinal regulation having an excellent action for intestinal regulation, a diet composition having an excellent diet action, each making use of bean curd lees not effectively used, food and drink, and a method of selectively producing arabinose.SOLUTION: An antioxidant composition includes enzyme-treated bean curd lees prepared by treating bean curd lees with a cell-wall decomposing enzyme. A composition inhibiting activity of disaccharide hydrolase, a composition for intestinal regulation and a diet composition each include fermented enzyme-treated bean curd lees prepared by fermenting the enzyme-treated bean curd lees with yeast, prepared by treating bean curd lees with a cell-wall decomposing enzyme. Food and drink include at least any of the antioxidant composition, the composition inhibiting activity of disaccharide hydrolase, the composition for intestinal regulation and the diet composition. A method of selectively producing arabinose includes treating bean curd lees with a cell-wall decomposing enzyme to prepare the enzyme-treated bean curd lees, and selectively obtaining arabinose made soluble in a liquid constituting the enzyme-treated bean curd lees.
