The food is preferably an agricultural food, a fermented food, a livestock food, a fishery food or a chewing gum.

Thus, the objective galactosyltrehalose having physiological effects such as a cariostatic action, a Bifidobacterium bacterium-multiplying action, a calcium absorption-stimulating action, an immune-activating action or a carcinogenesis-inhibiting action, and useful for agricultural foods, sea foods, fermented foods, livestock foods, marine foods, etc., is obtained in a high yield.
