The sensor 10 for detecting oxygen concentration set in the vapor phase part of the fermentation tank is connected to the on-off valve 6 fixed to the air inlet pipe 8 through the oxygen concentration regulator 11, and acetic fermentation is carried out by keeping always the oxygen concentration in the vapor phase at 5W60%(v/v) by the oxygen concentration regulator 11.
