    • PROBLEM TO BE SOLVED: To provide a method for producing a hesperetin-7-β-maltoside and to provide uses thereof. SOLUTION: The method for producing the hesperetin-7-β-maltoside is characterized as follows. Hesperidin is reacted with an enzyme having an α-1,6-rhamnosidase activity to remove rhamnose. The resultant 7-β-D-monoglucosyl hesperetin is reacted with a glycosyltransferase in the presence of starch or dextrin to add one or more α-D-glucoses. A method for producing a hesperetin glycoside composition containing the hesperetin-7-β-maltoside is characterized as follows. The resultant addition product is reacted with a hydrolase to reduce the average number of added glucoses. Thereby, the average number of added glucoses is regulated to 1.5-3.0 based on the 7-β-D-monoglucosyl hesperetin. A method for improving the water solubility of a sparingly water-soluble substance comprises making the sparingly water-soluble substance selected from the hesperidin, the 7-β-D-monoglucosyl hesperetin, hesperetin, rutin, naringin and isoflavone coexist with the hesperetin-7-β-maltoside.
