    • PURPOSE: To obtain nootkatone useful as a perfume industrially advantageously and selectively in high purity and yield in one step, by catalytically oxidizing valencene with oxygen or a gas containg the oxygen in an inert organic solvent in the presence of an organic heavy metallic catalyst.
      CONSTITUTION: Valencene of formula 2 is catalytically oxidized with oxyen or a gas containing the oxygen in an inert organic solvent, e.g. benzene, in the presence of an organic heavy metallic catalyst, preferably an organometallic compound of Group VIII, e.g. Fe, Co, Ni, Ru, Rh, Pd or Ir, etc. to give nootkatone of formula 1 having a grapefruitlike fragrance in one step without passing through an intermediate step of hydroperoxide in danger of causing violent explosion by the technique of industrially advantageous catalytic oxidation industrially and easily in high conversion and yield. Compounds of formulas 3 and 4 formed as by-products in the above-mentioned reaction can be easily converted into the compound of formula 1.
