    • PROBLEM TO BE SOLVED: To provide excellent processed cheeses having a suitable heat resistant form-holding property and also having a reduced over time change in the heat resistant form-holding property during their preservation in a simpler manner than those used conventionally.SOLUTION: The processed cheeses are produced by adding 0.1 to 5.0 wt.% molten salts containing a pyrophosphate and 0.1 to 4.0 wt.% whey protein to 100 wt.% raw material cheeses. Further, among the molten salts, the blending ratio of the pyrophosphate to the other molten salts is set to (1:4) to (3:2).
