    • PROBLEM TO BE SOLVED: To provide a method for non-heating extraction of a target substance which is easy to be denatured by heat, aiming at increase of extraction amount of the target substance from a raw material and reduction of extraction time.
      SOLUTION: The high-pressure ethanol extraction method for extracting the target substance from the raw material includes: a step of storing the object to be pressurized; a step of supplying the pressurizing fluid to a high pressure container; a step of increasing the pressure of the pressurizing fluid by a high pressure pump; and a step of extracting the target substance by keeping ethanol or a mixture of ethanol and water, which is a solvent, at a prescribed pressure not lower than 5 MPa and at a prescribed temperature not lower than the melting point and lower than the boiling point of the solvent at a high pressure, and bringing the raw material into contact with the solvent. The extraction amount of the target substance from the raw material is increased and the extraction time is shortened by carrying out the high-pressure ethanol extraction method.
