      SOLUTION: This method for purifying the mandelic acids comprises mixing contact of a crystal containing the dimer of the mandelic acids and the mandelic acids with an aqueous solvent not containing the organic solvent (a mixed liquid after mixed may be such a solution that the mandelic acids are completely dissolved in water or may be such a mixed suspension that the mandelic acids are not completely dissolved therein), and then subjecting the mixed liquid to solid-liquid separation at 0-60°C under an acidic condition of a pH of 7.0 or less.

    • PROBLEM TO BE SOLVED: To provide an efficient method for producing an optically active cyanohydrin, which can be accumulated in high concentration, and to provide a safe method for producing an optically active α-hydroxy carboxylic acid in high yield.SOLUTION: The method for producing the optically active cyanohydrin comprises an enzymatic reaction carried out in the presence of an organic solvent substantially immiscible with water by using an aromatic aldehyde and HCN as substrates. The method for producing the optically active cyanohydrin is characterized in that a hydroxynitrile lyase prepared by using a genetically recombined organism as an enzyme, and a state in which the molar concentration of the aromatic aldehyde in a reaction solution is ≤0.4 mol/kg and not higher than the molar concentration of the HCN is maintained for ≥2 hr at a reaction temperature of -10 to 40°C at pH 4.0-7.0, thereby accumulating the optically active cyanohydrin having optical purity of ≥90% e.e. in an amount of ≥35 wt.% in a reaction system.
