摘要： PROBLEM TO BE SOLVED: To provide a process for producing an oil, or a polyunsaturated fatty acid (PUFA).SOLUTION: A process for producing an oil, or a polyunsaturated fatty acid (PUFA), is described where an aqueous liquid (fermentation broth) comprising cells is deaerated, and the oil or PUFA is obtained from the cells after the cells are heated or pasteurised. Deaeration can be performed by techniques including the application of a vacuum or reduced pressure, the application of mechanical deaeration or degassing, changing viscosity by dilution or heating, changing fermentation conditions, changing the pH, filtration, gas displacement or chemical deaeration. The cells are yeast, fungi, bacteria or algae cells, and the PUFA contains C20 or C22, C22 Ω-3 or Ω-6 PUFA. Specifically the cells are Crypthecodinium cohnii or Mortierella alpine, and the PUFA is docosahexaenoic acid (DHA) or arachidonic acid.

摘要： The invention relates to a method for the synthesis of short-chain ω-unsaturated fatty acids of general formula CH2═CH—(CH2)n—COOR in which n is an integer between 2 and 11 and R is H or an alkyl radical containing from 1 to 4 carbon atoms, from long-chain monounsaturated fatty acids or esters of formula CH3—(CH2)m—CH═CH—(CH2)p—COOR in which m and p are integers, either identical or different, between 2 and 11, such that the molecule contains at least 10 adjacent carbon atoms in the main chain, said method comprises the first step of submitting the long-chain monounsaturated fatty acid charge to an oxidation by fermentation using a microorganism containing enzymes of oxygenase type, thus leading to the formation of α,ω-diacids, and then a second step of subjecting the product from the first step to a catalytic metsthesis crossed with ethylene for forming two short-chain ω-unsaturated fatty acids having a main chain length relative to that of the starting unsaturated fatty acid or ester of between 0.2 and 0.8, and preferably 0.35 and 0.75.

摘要： PROBLEM TO BE SOLVED: To provide an improved pasteurization protocol for microbial cells.SOLUTION: An improved pasteurization protocol comprises three stages, a first heating stage, a second plateau stage at which the cells are held at a (maximum and) constant temperature, and a third cooling stage. Both the heating and the cooling stages are rapid, with the temperature of the cells passing through 40 to 80°C in no more than 30 min in the heating stage. The heating rate is at least 0.5°C/minute and during cooling is at least -0.5°C/min. The plateau maximum temperature is from 70 to 85°C. By plotting the pasteurization protocol on a time (t, minutes) versus temperature (T, °C) graph, a trapezoid having an area less than 13,000°C min is obtained. Not only does this result in a smaller energy input (and so a reduction in costs), but a better quality (and less oxidized) oil results having a peroxide value (POV) of less than 1.5 and an anisidine value (AnV) of less than 1.0.

摘要： The object of the present invention is to provide a fatty acid composition whose fatty acid rate differs from that previously reported. The above object is achieved by a fatty acid composition obtained by culturing a host which is transformed with a recombinant vector carrying a nucleic acid comprising the nucleotide sequence of SEQ ID NO: 1 or a nucleotide sequence encoding a protein having the amino acid sequence shown in SEQ ID NO: 2 or a mutant functionally equivalent to the nucleic acid, wherein at least one or more of i) to v) shown below: i) the oleic acid content; ii) the ratio of the oleic acid content to the palmitic acid content; iii) the ratio of the total content of stearic acid and oleic acid to the palmitic acid content; iv) the ratio of the total content of stearic acid and oleic acid to the total content of palmitic acid and palmitoleic acid; and v) the n-6 fatty acid content is higher in the fatty acid rate of the fatty acid composition than in a cultured product obtained by culturing a host which is not transformed with the recombinant vector.
