CONSTITUTION:Raw material rice for brewing as it is or after any process of rice polishing, cleaning, immersing or steaming is brought into contact with carbon dioxide in a liquid or supercritical state and extracted so that saccharide attached to the surface of the raw material rice in rice polishing are removed and extraction efficiency of lipid is improved with carbon dioxide. The cleaning and immersing operations are preferably carried out by using water processed with an alkali or an acid and the extracting operation is done by bringing carbon dioxide in an upward countercurrent into contact with the raw material rice for brewing packed into a container.

摘要： PURPOSE:To enable production of foods and drinks such as refined SAKE (Japanese rice wine) containing much malic acid by using a variant yeast obtained by efficient screening according to a method for selecting and obtaining thereof with dimethyl succinate. CONSTITUTION:A yeast such as refined SAKE yeast is subjected to variation treatment with ethyl methanesulfonate and then scattered on a YM plate to carry out culturing. Regenerated colonies are then replicated on a dimethyl succinate (DMS) plate. A strain without production is separated as a DMS- sensitive strain. Such strains are subsequently screened to provide a strain GHA-69 (FERM P-11080) capable of highly producing malic acid. The resultant variant yeast is capable of sufficiently producing organic acids in any of respective yeasts such as refined SAKE, 'SHOCHU' (popular distilled spirit), beer, wine and bread. If the variant strain is used to produce refined SAKE, etc., products containing much organic acids can be produced. Thereby, comfortable acid taste can be imparted to various foods and drinks in which the yeast participates.

The glucoamylase inhibitor is an oligosaccharide shown by the formula containing alpha-1,4-imino bond in a molecule of acarbose produced by culture of actinomycetes and a relative substance thereof. A highly concentrated oligosaccharide of filtrate of a liquefied solution of polished rice (starch) is passed through a column packed with the above- mentioned inhibitor so that glucoamylase can be eluted from the inhibitor and recovered. On the other hand, refined SAKE of brewage from which glucoamylase is removed will not cause reduction in qualities even by preservation at room temperature.

The inhibitor has effective inhibitory action on angiotensin converting enzymes and extremely high safety. Since the by-product is used, resources can effectively be utilized. The inhibitor can orally be ingested and is advantageous.
