摘要： Methods of processing four-legged slaughter animals for consumption as meat and/or meat product(s) are described. The methods comprise (I) contacting exterior surfaces of the live animal at least once when the animal is en route to being slaughtered but before it is killed by exsanguination, with a microbiocidal solution, or (II) contacting a carcass of the animal, after exsanguination, with a microbiocidal solution, or (III) contacting at least one raw meat product and/or at least one processed meat product derived from the carcass at least once with a microbiocidal solution, or (IV) conducting any two or all three of (I), (II), and (III). In each case the microbiocidal solution is, independently, comprised of: (a) water having a bromine residual derived from (i) at least one bromine source, (ii) at least one alkali metal base, and/or at least one alkaline earth metal base, and (iii) at least one halogen stabilizer; or (b) water having a bromine residual derived from (i) ammonium bromide, and/or at least one alkali-metal bromide, and/or at least one alkaline earth metal bromide, and (ii) at least one alkali metal hypohalite and/or at least one alkaline earth metal hypohalite; or (c) water having a bromine residual derived from a mixture or combination of any one or more of (a) and any one or more of (b); the bromine residual in each of (a), (b), and (c) being sufficient to provide microbiocidal activity.

摘要： An apparatus for salting, pickling or adding additives to meat, fish or the like, which comprises a tank containing a solution of treatment media to be introduced into the food products. The tank has an inlet opening and an outlet opening, through which chunks of meat or fish enter and leave the tank, respectively. The apparatus further comprises a conveying means suitable to continuously bring enclosed portions of meat or fish into the tank through the inlet and out of the tank through the outlet, while the portions are carried forward in a submerged state.

摘要： The invention relates to the meat industry, in particular to methods for salting meat during meat foods manufacturing for example sausages or whole muscle products. The inventive method consists in preparing brine, activating said brine by a flow-through treatment in a tank cavitation reactor or by a batch treatment in an uncased cavitation reactor and in mixing the activated brine with a raw meat. The brine activation is carried out at a ratio between the maximum amplitude of acoustic wave pressure inside the reactor and a hydrostatic load therein ranging from 2 to 23.

摘要： Low pH, high moisture, shelf stable foodstuff and methods of making are provided. The foodstuff is acidified with acidic electrodialized composition, edible inorganic acid or mixture thereof to obtain a final product pH of 4.6 and preferably 4.3 or less. The low pH foodstuff has total organic acids content of 0.12 moles per 1,000 grams of foodstuff or less and is heated to a temperature of 165° F. to pasteurize. New or improved, shelf stable, non-sour food components and products and their methods of preparation are also provided.
