摘要： A method and apparatus for removing a portion of fat from meat cuts involves placing a meat cut on a longitudinal conveyor, pressing sensor probes into the meat cut to measure the relative thickness of fat and the location of lean in the meat, and then withdrawing the sensor probes from the meat. An electronic signal is transmitted from the sensor to a controller along with an encoder signal to determine the depth from the outer lower surface of the meat cut through a layer of fat in the meat to a layer of lean in the meat. Data taken from the foregoing step determine the desired position of the blade, which removes the appropriate amount of fat to be removed from the meat cut.

A plurality of spaced hook members (28) are secured to the conveyor chain and have a shank (30) slidably engaging the top of the perimeter wall, and a hook portion extends downwardly and outwardly with respect to the perimeter wall. The semi-circular end portion of the second end (18) of the platform comprises a sausage loading station and has a diameter less than the distance between the side portions of the perimeter wall so that the hook portions of the hook members sliding over such end portion will travel at a speed greater than the speed of the hook members sliding over the side portions of the perimeter wall.

摘要： An apparatus (10) for producing and processing a strand of sausage (26) or foodstuff has a sausage producing machine (14) which produces a linked strand of sausage for deposit of loops (28) of the strand on the hooks (70) of a continuous conveyor (52). The conveyor (52) picks up the loops (28) of the strand at a loading station (16) immediately adjacent the discharge end of the machine, and conveys the loops (28) to a processing station for smoking or the like. The conveyor (52) then moves the loops to an unloading station (18) for removal of the strand from the conveyor (52), whereupon the conveyor (52) downstream of the unloading station (18) returns to the loading station to pick up additional product. A conveyor take-up mechanism (20) is located immediately downstream from the loading station (16) to permit the conveyor (52) to case movement at the loading station (16) (while the casing on the machine is being replenished) while the conveyor (52) can continue movement in the processing area. Sensors and controls interconnect the machine and the conveyor to coordinate the operational functions of each. A method of producing and processing a strand of sausage or foodstuff involves producing a linked strand of material, depositing linked loops thereof on the hooks of a moving conveyor, controlling the coordinated activity of the production of the product with the movement of the conveyor; moving the product to and through a processing station, and thence to an unloading station, while periodically stopping the movement of the conveyor and the operation of the machine while continuing the movement of the conveyor through the processing area.

摘要： A meat encasing machine has a looper horn (12), linking chain (24) and conveyor (14) which, prior to production, have home positions which are determined. A pulsed signal is generated as the looper horn (12) rotates and is transmitted to an amplifier (36) from an encoder (34) on the servo motor (32) for the looper horn (12) and the conveyor (14). The output pulse signal is then reduced in frequency so that it can be read by a PLC (40). The PLC (40) counts the pulses in the signal and can determine the relative position of the looper horn (12) based on the count and can therefore minimize the rotation of the looper horn (12) in the home position at the beginning of each new cycle. The meat encasing machine may also be controlled such that the linking chain (24), looper (12), and conveyor (14) have no direct mechanical or electrical interaction between each other. By driving the components with separate servo motors (26, 32), each can be precisely controlled in the desired ratios with respect to each other.

摘要： A conveyor chain (112) for linked sausages has a plurality of spaced first hook carriers (114) with second hook (116) carriers pivotally secured thereto between pairs of the first hook carriers. A generally J-shaped hook (92) having an elongated shank (94) is secured to each of the first and second hook carriers by one of the ends of the shank. A roller bearing (106) is rotatably mounted on that end of the shank (94) on only the shanks depending from the second hook carriers (116). The roller bearings (106) engage teeth (74) on a sprocket wheel spaced to operatively drivingly engage only the shanks depending from the second hook carriers (116). The conveyor chain (112) is continuous in nature and movably extends through an enclosed smoke compartment (34) for subjecting the loops (32) of linked sausages to the smoke material, either of a liquid nature, or natural smoke. The compartment (34) has a series of spaced rotatable members (46, 48, 50, 52, 58), some of which are sprockets (46) which engage and drive the chain (112), and others which are rotatable members (e.g. 150) having a circular bearing surface extending therearound to engage laterally extending bars (114) on the chain opposite to the hook members (92). The sprocket members (46, 52) are disposed in a horizontal plane and the rotatable members (58, 60) with the bearing surfaces are disposed in a vertical plane.

The compartment (34) has a series of spaced rotatable members (46, 48, 50, 52, 58), some of which are sprockets (46) which engage and drive the chain (112), and others which are rotatable members (e.g. 150) having a circular bearing surface extending therearound to engage laterally extending bars (114) on the chain opposite to the hook members (92). The sprocket members (46, 52) are disposed in a horizontal plane and the rotatable members (58, 60) with the bearing surfaces are disposed in a vertical plane.
