    • According to the method the ribs (2) in a piece of meat (1) are loosened in that two adjacent areas of the membrane of the bone offset in relation to each other in the longitudinal direction of a bone (2) are pressed towards the bone and displaced in relation to each other transversely to the bone, thereby breaking the membrane, and that the latter operation is effected successively along part of the bone. The bones may be loosened further, in particular with the view of a subsequent mechanical extraction in that the piece of meat (1) is being clamped and the bones (2) supported at their membrane side while being supported at the opposite side via the meat in such a manner that the bone portion of the piece of meat is by and large kept in the same plane as the meat portion beyond the bones, while the meat in the area at the free ends (3) of the bones at the same time is pressed away from the bones in the direction in towards the piece of meat and away from the membrane side.

    • The invention concerns a device for the gripping and retention of part of a split carcass by the spinal column (17), and the conveyance of that part essentially in the lengthwise direction of the spinal column, while retaining it by the spinal column during processing of the carcass part by means of cutting tools.
      The device comprises a mainly rectilinear conveyor (10) with retention elements (11) connected as links in an endless chain, with each element having a first section (21) with a contact surface (22) for a first side of the spinal column and a second section (25) with a pressure surface (26) for a second side of the spinal column. The two sections of each element are designed to allow the contact surface (22) and the pressure surface (26) to be relatively moved towards and away from each other in a direction across the conveyor's direction of conveyance.
      The spinal column can be gradually gripped and clamped between the surfaces (22, 26) when the contact surface (22) and pressure surface (26) are successively, element by element, moved towards each other.
      The device provides a firm grip between the spinal column and the machine parts of an apparatus for processing of e.g. fore-ends or middles.

    • In a method for treatment or examination of carcasses of slaughter animals, especially hogs (39, 40, 46) in a treatment or examination station the carcasses are forwarded consecutively in a continuously working first transport system in which the carcasses, suspended by their hind legs, are forwarded along a given path and at a rate of typically 200-400 carcasses per hour. From this first transport sys­tem the carcasses are transferred to an intermittently working second transport system in which the individual carcass (40) is forwarded, suspended from its hind legs and held in a fixation frame (17) which is circulated in a closed path. Before the transfer to a frame the total length of the carcass is measured in a station (49). On the basis of this measurement of length the frame is positioned correctly in relation to the carcass by means of a device (81) for height ad­justment of the head fastening means of the frame. In a subsequent station the position of given anatomical positions, foreleg and col­larbone, of the individual carcass is determined, and on the basis of said total length and these further position determinations insertion probes are controlled, which probes are correctly positioned in re­lation to the carcass, and which are inserted at desired places in the carcass, and by means of which a quality determination is made, on the basis of which quality determination a control of branding assemblies (86, 87, 88, 89 and 90) is performed. After branding, the carcass is transferred from the second, intermittently working transport system to the first, continuously working transport system.
      On the basis of the measurement of length and the position deter­minations made, the probes and the branding assemblies and any other treatment means such as sampling means or the like are controlled. On the basis of the quality determination the carcass may be not only branded, but also classified appropriately, as the various parts of the carcass may be exploited in the best possible manner on the basis of the quality determination made. All these data concerning length, positions, quality, classification, etc., are stored and processed in a central computer (10, 11).
