    • The invention relates to a method for cooling an aqueous aspartame solution and crystallization of aspartame therefrom with avoiding of turbulence in the aqueous crystallizing system, by (i) feeding a hot aqueous aspartame solution to means for dispersing droplets; and (ii) dispersing these into a water-immiscible liquid of at least 20°C lower temperature so that no nucleation will occur in the droplets while these are passing the water-immiscible liquid; and (iii) cooling said water-immiscible liquid so that said droplets are effectively cooled to reach an initial relative supersaturation of α-L-aspartyl-L-phenylalanine methyl ester within the droplet in the range of 1 to 6, preferably 1.2 to 4; and (iv) collecting the cooled droplets to crystallize aspartame; (v) and providing sufficient time therefore.
