    • A method which comprises: bringing cells having a protein into contact with a substance interacting with the protein to thereby make them to interact; purifying the cells as being under the interaction with the substance; irradiating the purified cells with laser to thereby directly ionize the substance; and analyzing the thus ionized substance by mass spectrometry. Using this method, the molecular weight, molecular chemical species and molecular structure of a protein occurring in cell surface layer or in cells or a substance interacting with the protein can be easily identified or analyzed within a short time. The above method is a novel method of screening a substance interacting with a protein occurring in cells without resort to the conventional bioassay methods. Also, it is a novel method of judging the presence of a specific protein in cells with the use of a substance interacting with the protein. Moreover, these methods can be conveniently performed and enable accurate and quick judgment.

    • It is intended to provide a novel technique of drying a brewery yeast and a process for producing liquors by using the same. Namely, it is intended to provide a method of producing a dry yeast which exerts an adequate fermentation ability when directly used in fermentation without resort to prepropagation and gives a favorable flavor, and a process for producing liquors by using the same. A method which comprises allowing a yeast having been collected from a brewery process to intake a stabilizer such as trehalose, further allowing it to intake glycerol, if desired, to thereby lower the moisture activity in the yeast cells, and then dehydrating and drying the yeast while maintaining a high survival ratio and fermentation ability thereof; and liquors produced by using the yeast.
