    • Disclosed is a method for providing a desired amount of cooling to a quantity of food product in a vessel within a given period of time, comprising: (A) feeding cryogenic liquid which is not carbon dioxide out of a plurality of nozzle openings into a vessel directly into a formable mass of food product in the vessel at a flow rate effective to provide from each nozzle not greater than 1,900 BTUs of refrigeration to the formable mass of food product per minute from the cryogenic liquid delivered from each nozzle, while an impeller is moving the food product past the nozzle openings, wherein each nozzle opening is in direct contact with the food product and is at the interior surface of the vessel or is between the interior surface and the path of the impeller, (B) while maintaining the rate at which the formable mass of food product is moved past each nozzle opening to be sufficiently high so that the mass of food product remains formable as it is being cooled by contact with the cryogenic liquid, and (C) feeding said cryogenic liquid into said food product in accordance with steps (A) and (B) from a sufficient number of said nozzle openings to provide the desired amount of cooling to the quantity of food product within the given period of time. Also disclosed is an embodiment in which not greater than 30 pounds of cryogenic liquid per minute per nozzle is fed into the food product.

    • In order to overcome problems that earlier apparatus and methods have experienced, an apparatus (10) for applying a heat transfer substance, in particular comprising a cryogen, for example comprising liquid nitrogen (LIN), to destroy bacteria, in particular comprising campylobacter, on a product (12), in particular selected from the group consisting of a food product, a carcass, or a combination of food products and carcasses, is proposed, said apparatus (10) comprising: - a housing (16) having an inlet (18), an outlet (22), and a chamber (20) therebetween in communication with the inlet (18) and the outlet (22); - a conveyor (24) constructed and arranged to transport the product (12) through the chamber (20); - a heat sensing apparatus (26, 28, 30; 32, 34, 36) responsive to heat parameters of the product (12) at the inlet (18) and the outlet (22) and able to transmit signals of said heat parameters; - a heat transfer substance spray apparatus (38, 40, 44) in fluid communication with the chamber (20) for providing said heat transfer substance to said chamber (20); and - a controller (52) connected to the heat sensing apparatus (26, 28, 30; 32, 34, 36) and the heat transfer substance spray apparatus (38, 40, 44) for controlling administration of said heat transfer substance to the chamber (20) and the product (12) in response to the signals from said heat sensing apparatus (26, 28, 30; 32, 34, 36). A related method of applying a heat transfer substance is also proposed.

    • In order to overcome problems that earlier apparatus and methods have experienced, a freezer apparatus (10) for treating a product (14, 18), in particular a food product, with cryogen to kill bacteria on the product (14, 18) is proposed, comprising: - a source of cryogen liquid, in particular comprising liquid nitrogen (LIN); - a source of cryogen gas, in particular comprising gaseous nitrogen; - a first conduit (42) for delivering a first amount of the cryogen liquid; - a second conduit (58) in fluid communication with the first conduit (42) for delivering a second amount of the cryogen gas into the cryogen fluid for being mixed (61) therewith to provide a cryogen mixture having a ratio selected of cryogen gas to cryogen liquid; and - a delivery apparatus in fluid communication with the first conduit (42) downstream of the second conduit (58), the delivery apparatus comprising at least one outlet (48) through which the cryogen mixture passes for contacting a surface of the product (14, 18). A related method of treating a product (14, 18) is also proposed.

      a pulsing valve (78) disposed at an interior of the second pipe (60) upstream of the mixing region (70), the pulsing valve (78) adapted for releasing the gaseous cryogen (64) into the liquid cryogen (30) at select intervals of time to provide a pulsating flow (80) of the liquid-gas entrained cryogen mixture downstream of the mixing region (70) for contacting the product (16).
