    • A water-dispersible coating composition for use on food substrates, which permits incorporation of a substantially increased rice component content compared to prior art coatings, without the occurrence of objectionable white-lump reticulation. The coating contains at least stated minimum levels of small-particle size rice flour and/or rice starch (null100 USS mesh size and/or 200 USS mesh size, respectively or finer) depending upon the total amount of rice used in the mix, and exhibits minimal surface roughness and substantially no reticulation when frozen upon the food substrate, while imparting increased crispness, holding time and lighter color once the frozen coated food substrate is reconstituted via gradient heat, microwave energy, or deep-frying reconstitution methods, without sacrificing appearance, flavor, and tooth compaction characteristics desirable to consumers of the final reconstituted product.

    • A method of applying and distributing a charge of a particulate material onto a top surface of a substrate (80), such as a pizza batter, includes the steps of providing said charge from an overhead hopper (12); delivering said charge onto a movable vibrational surface (82) having an area exceeding the area of said substrate (80), said surface being positioned above and in registration with said substrate (80); keeping said charge on said vibrational surface within a specific area corresponding to the area of said substrate by means of an encircling guide (50) defining said specific area and having at its lower end a flexible skirt (52) for contacting and sealing against said vibrational surface (82); vibrating said vibrational surface (82) for causing said charge received on said vibrational surface (82) and kept within said specific area to be evenly and randomly distributed within said area; and transferring said charge from said vibrational surface (82) onto said substrate by moving said vibrational surface (82) away from said position above and in registration with said substrate while vibrating said vibrational surface for allowing said charge evenly and randomly distributed within said specific area of said vibrational surface to drop onto said substrate (80). An apparatus for carrying out the method is also provided.
