    • PURPOSE: To provide an antioxidant capable of effectively suppressing the degradation of a food by oxidation, by treating crushed sesame seeds with β- glucosidase, and using the product as an active component of the antioxidant.
      CONSTITUTION: Crushed sesame seeds (e.g. defatted sesame seeds after oil expression) or extract of sesame seeds with a solvent (preferably extracted with a hydrated alcohol composed of a mixture of a 1W4C alcohol and water at a weight ratio of 10:90W90:10) are treated with β-glucosidase preferably at 30W 60°C and 3W7pH. The reaction product is extracted with a hardly water-soluble solvent such as ethyl acetate to obtain the objective antioxidant.

    • NEW MATERIAL:Tetrahydro-1-[ 3-methoxy-4-hydroxyphenoxy ] -4- [ 3,4-(methylenedioxy)phenyl]-1H,3H-furo[3,4-c]furane.
      USE: Antioxidant: it has high safety.
      PREPARATION: β-Glucosidase or a microorganism such as Bacillus Natto or Rhizopus oligosporus is made to act on sesami seeds, defatted sesami seeds or their extract to give the compound of formula I . When the substrate is treated with the enzyme, the extract is dissolved or suspended in water, sterilized by cell filtration or with humid heat and kept at such a temperature and a pH as β-glucosidase can easily develop its action (usually pH 3W7 and 30W65°C). On treatment with the microorganism, the extract is combined with water, sterilized, when necessary, adjusted in pH to 4W7, then the microorganism is inoculated and cultured.
