摘要： PROBLEM TO BE SOLVED: To obtain a new triglyceride having a triglyceride structure similar to that of a component in human mother's milk and useful for preparing standardized milks for immature babies and pregnant women, etc. by introducing a specific saturated or unsaturated fatty acid recidue to the specified position of glycerol. SOLUTION: This compound is expressed by the formula [R1 and R2 are each a 18-22C unsaturated fatty acid-originated acyl group which may be oxidized, provided that at least one of R1 and R2 is an acyl originated from an ω6, ω9 or ω3-unsaturated fatty acid; (n) is 14-16], for example, 1,3- diarachidonyl-2-palmitoyl triglyceride. The compound of the formula is obtained by allowing a lipase acting only on the 1 and 3-ester bonds of a triglyceride to act on the triglyceride in which a 16-18C fatty acid is clearly bonded to its 2-position and subsequently subjecting the product to an esterification or transesterification reaction with the ω6, ω9 or ω3-unsaturated fatty acid or its ester added to the reaction system.

摘要： PROBLEM TO BE SOLVED: To obtain an oil or fat which contains (n-3) docosahexaenoic acid(DHA) and (n-6) docosapentaenoic acid(DPA) in high concns. and eicosapentaenoic acid(EPA) in a low concn. by culturing the strain SR21 of the genus Schizochytrium capable of producing (n-6) DPA in a medium and extracting an oil or fat from the culture product. SOLUTION: A strain having the same or substantially the same mycological properties as those of the strain SR21 accumulates an oil or fat in an amt. of at least 10wt.% based on dry fungi. The oil or fat contains 6-11wt.% (n-6) DPA, 25-45wt.% (n-3) DHA, and 0.5wt.% or lower EPA based on the total fatty acid. The medium is prepd. by using natural or artificial seawater. A carbon source is used in a concn. of 20-120g/l, and other necessary ingredients are added. The medium is adjusted to a pH of 4.0-6.5 and is sterilized in an autoclade. The fungi is cultured at 10-35 deg.C for 3-7 days by air-flow agitation culture, shake culture, or standing culture.

摘要： The present invention relates to the Schizochytrium genus SR21 strain and a microorganism belonging to the same species as does said SR21 strain or having substantially the same fungological properties as does said SR21 strain, the said SR21 strain and microorganism having the ability to produce the (n-3) series of docosahexaenoic acid (DHA) and the (n-6) series of docosapentaenoic acid (DPA), and the invention also relates to a process for preparing the (n-3) series of DHA and the (n-6) series of DPA utilizing said microorganisms. The microorganisms according to the present invention are superior in their proliferation character and their propensity to produce fat, and have the ability to produce the (n-3) series of DHA and the (n-6) series of DPA very well. Accordingly, it is possible to effectively produce the (n-3) series of DHA and/or the (n-6) series of DPA, which are useful in the fields of foods and pharmaceuticals, using the microorganisms according to the present invention. In addition, the present invention provides a fat obtained by culturing the present microorganisms. Since the fat composition contains the (n-6) series of DPA in addition to the (n-3) series of DHA having various physiological activities, it is possible to stably and effectively supply the (n-6) series of DPA and/or the (n-3) series of DHA to subjects in need of these highly unsaturated fatty acids by adding the fat composition to various feedstuffs or foods.
