摘要： PROBLEM TO BE SOLVED: To provide a flow dispensing device, to be installed at the outlet of an extruder, which is used for transferring a high moisture content proteinaceous food to the inlet of a multi-flow path cooling die from an extruder with more than one piece of extrusion screw.
SOLUTION: This flow dispensing device has an inner extrudate channel which defines a flow path for passage of an optional specified portion of the extrudates from the outlet of a food extruder to the inlet of a cooling die. In addition, the ratio of the length of the extrudates flow path running through the channel to the length of an outer diameter of any optional one of individual extruder screws is higher than about 0.75:1.

摘要： PROBLEM TO BE SOLVED: To provide a method and an apparatus for controllably slicing a protein meat-like food to make the appearance of a meat-like piece similar to that of real meat as much as possible.
SOLUTION: The protein meat-like food with a pattern showing a most suitable fibrous pattern is produced from a extrusion-molded food which is passed through a conduit pipe with a divided cross section shape. A method for producing the food comprises determining the cutting outline of the extrusion-molded food including a cutting outline to be sliced along almost the same line as the longest axis of the conduit pipe section, and slicing the extrusion-molded food in a direction almost opposite to a direction in which the extrusion-molded food flows inside the conduit pipe or is discharged therefrom, using at least one blade formed to slice according to the determined cutting outline.

The extrudate flow rate is optimized and regulated as a function of the flow rate and temperature of the extrudate and the coolant from the temperature of the coolant outlet point.
