摘要： PROBLEM TO BE SOLVED: To provide a method and an apparatus for controllably slicing a protein meat-like food to make the appearance of a meat-like piece similar to that of real meat as much as possible.
SOLUTION: The protein meat-like food with a pattern showing a most suitable fibrous pattern is produced from a extrusion-molded food which is passed through a conduit pipe with a divided cross section shape. A method for producing the food comprises determining the cutting outline of the extrusion-molded food including a cutting outline to be sliced along almost the same line as the longest axis of the conduit pipe section, and slicing the extrusion-molded food in a direction almost opposite to a direction in which the extrusion-molded food flows inside the conduit pipe or is discharged therefrom, using at least one blade formed to slice according to the determined cutting outline.

The method comprises the steps of: determining a cutting profile for the extrudate, making a slice through the extrudate that is substantially co-linear with the longest axis of the cross-sectional shape via one or more blades adapted to slice in a manner according to the above profile in a direction substantially opposed to the direction of flow of the extrudate through the conduit. The cross-sectional shape may be rectangular where the at least one blade slices through the extrudate in an orientation that is parallel with the longest dimension of the rectangular shape. Alternatively the cross-sectional shape may be circular where the cutting profile includes at least one circular slice that is concentric with the circular profile. The method may also involve the step of cooling the extrudate prior to cutting.
