摘要： PURPOSE:To carry out fermentation at normal pressure repeatedly reusing a mold without taking it out from a fermentation tank, by subjecting a fermentation mixture to pressure treatment so that the mold is floated, extracting the greater part of a fermented solution from the bottom, followed by refeeding a medium to it. CONSTITUTION:A fermentation mixture obtainded by fermentation using a common through flow atmospheric fermentation tank is subjected to pressure treatment with a pressurized gas having higher pressure than 1kg/cm G at fermentation, for example, 1.2-1.5kg/cm G, such as of pressurized air, the pressure is rapidly released, so that a mold together with bubbles are floated in the fermentation tank. The greater part of the fermented solution in a clear state is taken out from the bottom of the fermentation tank, and a new medium is fed to the tank, to carry out fermentation operations again.
