    • An ice storage bin and discharge apparatus for discharge of uniform size ice to an outlet station for bagging or other use, including an ice bin in the form of an elongated insulated storage receptacle for containing a mass of ice, and endless floor level conveyor adjacent and overlying the bottom wall spanning the length and width thereof defining an upper flight for advancing the mass of ice toward a discharge end wall of the bin. A first drive is provided for driving the floor level endless conveyor at a predetermined speed, and an ice shearing mechanism is provided at the discharge end wall comprising a plurality of ice shaving blades positioned to lie in a vertical cutting path extending above and aligned with a transverse discharge conveyor with the shear blades collectively transversely spanning substantially the width of the bin at plural levels above the discharge conveyor. A second drives moves the shear blades at a constant predetermined speed substantially through the height of the bin across the face of the ice mass being advanced toward the discharge end wall by the floor level conveyor to shear a selected thickness of ice particles off of the face of the ice mass to fall into the working zone of the discharge conveyor.

    • A cube ice storage and dispensing bin in the form of a large stationary elongated insulated tank of generally cylindrical configuration having a large pool of water therein maintained substantially at water freezing temperature in liquid state. The tank has a pair of longitudinally extending screw conveyor flights, which may be of skeleton-like construction, arranged along axes paralleling the longitudinal center axis of the cylindrical tank and located to opposite sides of the center axis. The screw conveyor flights are journalled in the end walls and driven at a slow speed producing gentle agitation and and tumbling of ice cubes floating in the pool to disrupt tendencies of the ice cubes to form multicube frozen blocks of ice and maintain a slurry of ice cubes and water therein. Transverse conveyor screws are provided adjacent each end for transferring floating ice cubes from an end region of one of the pair of longitudinal flights to the other, and a discharge conveyor having a conveyor screw and a cage-like trough is provided at the discharge end to selectively withdraw ice cubes from the pool of water and discharge them externally of the tank.

    • A cooler unit for cooling ingredient water or other liquids, wherein the liquid may be used in processing foods by direct contact with the foods or edible liquids may be cooled. The cooler unit includes a generally cylindrical tank of shell-andtube construction having an array of 3-inch diameter stainless steel tubes and end chambers partitioned by baffles connecting the tubes in series circuit relation, all surfaces exposed to the ingredient liquid being stainless steel. Liquid refrigerant is supplied to the interior of the shell above the tube array to discharge in droplets over the outer tubes surfaces along their whole length.

    • A reverse cycle defrost or water defrost type ice-maker refrigeration system includes a programmable controller which initiates a freezing cycle in which water is pumped for application to the chilled surface of an evaporator for freezing. All water that fails to be frozen absorbs minerals from the frozen water and is returned to the sump. The programmable controller terminates replenishment of water removed from the sump substantially prior to completion of the freezing cycle so that the sump level falls and the mineral content of water in the sump increases substantially. The ice is harvested at the end of the freezing cycle by hot refrigerant gas from the compressor directed to the evaporator or warm water while the sump is being drained and subsequently refilled prior to the initiation of a subsequent cycle of operation. The operation is energy efficient since water is saved and a reduced amount of water is used and a reduced amount of previously refrigerated water is disposed of by drainage of the sump.

    • In an auger-type product chiller having an auger including a series of successive flights that form a generally helical structure that, when rotated, moves product through cold water for chilling the product, control elements extending from faces of the flights at a non-zero angle. The control structures prevent "clumping" and packing of poultry product, break up any "clumps" and packs of the product that may develop, and improve product uniformity. In this manner, the advantages of proper agitation, as well as rapid, predictable and even product cooling and moisture introduction, are achieved.
