摘要： A process for freezing sushi, boiled rice or processed food containing boiled rice is described. The method permits to achieve substantially the same quality after natural thawing or thawing in an electric oven as before the freezing step. In one embodiment the process consists of three steps: Firstly the temperature of the product is reduced to 0 - -4 DEG C, secondly the temperature is reduced until having passed the maximum ice generation temperature range (up to -10 DEG C), lastly the food is cooled to at least -15 DEG C. The temperature gradient and freezing time in the second step being greater than in the first step. In another embodiment of the present invention the freezer temperature is preset to 0 - -10 DEG C. When freezing procedure starts, the temperature of the freezer is reduced to -15 DEG C within 10 to 20 minutes with a temperature gradient of 1 to 2 DEG C/min., then temperature is changed to -10 to -20 DEG C, and in the third step to -30 to -45 DEG C with a linear temperature gradient of 0.5 to 1 DEG C/min. Freezing time in the second step is about 15 min.
