    • A system for breaking a cap generated during vinification and for mixing the fermenting juice (32) in a tank (10) includes an injector (14) to inject gas into the tank to form a bubble (28) in the fermenting juice, a source of gas (18) to supply the injector, and a controller (16) operable to open and close the injector. The controller comprises a memory (48) operable to store a mixing recipe that includes instructions for opening and closing the injector, and a processor (46) operable to retrieve the mixing recipe from the memory and open and close the injector according to the mixing recipe's instructions. The bubble moves through the fermenting juice urging portions of the juice to flow relative to other portions. The juice that flows adjacent the cap (34) shears the cap at the juice cap interface to break the cap into smaller portions. In addition, the bubble may pierce through the cap or cause the cap to tip into the fermenting juice to also break the cap into smaller portions.

    • The present invention relates to an apparatus for manufacturing dissolved oxygen water which allows a user to easily control the oxygen solubility and facilitates the dissolution of oxygen. The apparatus for manufacturing dissolved oxygen water of the present invention comprises an oxygen solubility control unit, an oxygen concentration sensor, and an oxygen dissolution induction nozzle. The present invention is configured to re-supply a part of the dissolved oxygen water to a primary oxygen dissolution tank between the primary oxygen dissolution tank and a secondary oxygen dissolution tank, thereby enabling easy control of the oxygen solubility. Also, by spraying oxygen mixing water using a nozzle, the oxygen is nanosized and the dissolution is facilitated.
