摘要： Processes and compositions are described for the use in foodstuff flavor and aroma and perfume and perfumed article aroma augmenting, modifying, altering and enhancing compositions and as foodstuffs, chewing gum, toothpaste, medicinal product, perfume and perfumed article aroma imparting materials of specific isomer and isomer mixtures of 2- and 3-cyclotetradecen-1-ones having the structures: ##STR1## or mixtures of same or mixtures of such 2- and 3-cyclotetradecen-1-ones with cyclotetradecanone having the structure: ##STR2## or cyclododecanone having the structure: ##STR3## Addition of said 2- and 3-cyclotetradecen-1-ones or mixtures is indicated to produce:(a) In food flavorings, a sweet, brown sugar and musky aroma and sweet and musky flavor characteristics (useful for flavor augmentation or enhancement in pear, blackberry, apricot and peach flavors and as a bitterness depressant for such foodstuffs, flavor adjuvants and beverages as black coffee; and(b) In perfumes and perfumed articles, a sweet, musk aroma and exaltone-like, scorched linen, waxy and rooty nuances.

摘要： Described are processes and compositions for augmenting or enhancing the flavor and/or aroma of consumable materials including foodstuffs, chewing gums, medicinal products, toothpastes, perfumes, colognes, and perfumed articles using as the essential ingredient at least one C.sub.10 -terpene alkyl, alkenyl, haloalkenyl, and alkynyl ether and diether having the formula:(C.sub.10 --TERPENYL)--(O--R.sub.1).sub.nwherein n is 1 or 2; the terpene group is a moiety having one of the structures: ##STR1## AND R.sub.1 is one of C.sub.1 -C.sub.4 alkyl, C.sub.3 or C.sub.4 alkenyl, C.sub.3 alkynyl, or C.sub.3 haloalkenyl. The compounds wherein R.sub.1 is C.sub.2 -C.sub.4 alkyl, C.sub.3 or C.sub.4 alkenyl, C.sub.3 alkynyl or C.sub.3 haloalkenyl are novel compounds.

Addition of one or more cyclic acetals of 2-methyl-2-pentenal to foodstuffs, chewing gums, toothpastes and/or medicinal products produces sweet, fruity, gooseberry, green, aniseed, licorice, floral and herbal aroma characteristics and sweet, fruity, gooseberry, green, spearmint-like, aniseed, licorice, floral and herbal flavor characteristics with albedo-like flavor nuances.

摘要： Processes and compositions are described for the use in foodstuff, chewing gum, toothpaste and medicinal product flavor and aroma and tobacco flavor and aroma augmenting, modifying, enhancing and imparting compositions and as foodstuff, chewing gum, toothpaste, medicinal product and tobacco aroma and flavor imparting, augmenting, modifying and enhancing materials of one or more 5-acyl-2-(furfurylthio)dihydro-2,5-dialkyl-3-[2H]furanones having the generic structure: ##STR1## wherein R.sub.1 ', R.sub.2 ', R.sub.3 ' and R.sub.4 ' are each the same or different and each represents hydrogen or methyl produced according to the process of reacting one or more alpha, beta diketones containing from 4 up to 6 carbon atoms and having the generic structure: ##STR2## or one or more dimerization products thereof having the generic structure: ##STR3## wherein R.sub.1 ', R.sub.2 ', R.sub.3 ', R.sub.4 ', R.sub.5 ' and R.sub.6 ' are each the same or different and each represents hydrogen or methyl with furfuryl mercaptan having the structure: ##STR4## Addition of one or more 5-acyl-2-(furfurylthio)dihydro-2,5-dialkyl-3-[2H]furanones or "cis" or "trans" isomers thereof to consumable materials is indicated to produce:(A) In flavoring compositions for foodstuffs, chewing gums, toothpastes and medicinal products and in the foodstuffs, chewing gums, toothpastes and medicinal products per se, coffee, roasted, cocoa-like, caramel-like, licorice and roasted almond aroma and flavor characteritics at levels of greater than or equal to 0.01 parts per million; and(B) In tobacco, flavoring compositions for tobacco, tobacco substitutes and flavoring compositions therefor, wheat, caramel/coffee aroma and taste characteristics prior to and on smoking and nutty/pyrazine-like flavor and aroma characteristics with roasted nut like nuances on smoking.

摘要： Described is a process for the preparation of compositions of matter containing unsaturated lactones defined according to the generic structure: ##STR1## wherein R represents C.sub.6 alkyl or alkenyl; and X represents C.sub.2, C.sub.4 or C.sub.6 alkylene or alkenylene; with the provisos that R is C.sub.6 alkyl when X is alkenylene and R is C.sub.6 alkenyl when X is alkylene by means of the sequential steps of (i) fermentation of castor oil or ricinoleic acid using a microorganism selected from the group consisting of:Candida petrophilum, ATCC 20226;Candida oleophila, ATCC 20177;Candida sp., ATCC 20504; andCandida sake, ATCC 28137whereby gamma hydroxydecanoic acid and a mixture of other acids defined according to the generic structure: ##STR2## is formed wherein Y represents an oxo-saturated, oxo-unsaturated or di-unsaturated C.sub.9, C.sub.11 or C.sub.13 moiety according to the reaction: ##STR3## (ii) lactonization of the resulting gamma hydroxydecanoic acid by means of simultaneous acidification and heating according to the reaction: ##STR4## and (iii) lactonization (via distillation) of one or more of the resulting acids defined according to the structure: ##STR5## to form one or more lactones defined according to the generic structure: ##STR6## according to the reaction: ##STR7## wherein the sum of the number of carbon atoms in the X moiety and in the R moiety is equal to the number of carbon atoms in the Y moiety minus 1.Also described are the products produced according to such process as well as their organoleptic utilities for augmenting or enhancing the aroma or taste or consumable materials selected from the group consisting of perfume compositions, colognes, perfumed articles, perfumed polymers, foodstuffs, chewing gums, medicinal products, toothpastes, chewing tobaccos and smoking tobaccos.
