The invention relates to a multi-purpose extractor using steam to extract fruit juice or vegetable extracts, performed via radial flow of steam to obtain juice, or solvent for hydroalcoholic extraction, comprising: stackable baskets for the load of material for extraction, having at the central portion thereof a duct through which steam or solvent is fed in a downward direction; a double-walled casing having a valve at the upper portion thereof for collecting the extract and a detachable conical base for heating the extractor and incorporating an inlet valve and an outlet valve; where the conical base incorporates a collector and at least two valves; a detachable cover having at the centre thereof a valve for the ingress of steam or extraction solvent; an unperforated cover located above the baskets for trapping fine floating vegetable material; and a removable jacket.
