摘要:
PURPOSE: An irradiated meat product with improved storage stability is provided to control the oxidation of fat by using an antioxidant effect of soy sauce. CONSTITUTION: An irradiated meat product comprises the following steps: preparing material meat, and mixing the meat with a marinating solution; tumbling the meat mixture; producing the meat product using the mixture; and irradiating the meat product with radiation. The salinity of the marinating solution is 1-10wt% produced by using soy sauce. 20 parts of marinating solution by weight is mixed with 100 parts of meat product by weight. The absorption rate of the radiation is 0.5-10kGy, and the radiation is gamma-rays or electron beam. The meat product is sausage or ham using meat including livestock meat and poultry meat.
