摘要:
본발명은음식물조리시재료의잡미및 잡향을제거하고향미를증진하기위하여활용되는요리용맛술에관한것으로, 황매실과설탕을혼합하여추출한매실당액(梅實糖液)과정제된주정을혼합, 숙성한후 알코올함량을조정하고재차저온숙성하며, 고형물을여과함으로써, 매실맛술을제조하는것이다. 본발명을통하여, 맛술의유통, 보관및 사용과정에서의불요(不要) 발효및 산패를방지할수 있고, 단순한감미료기능을탈피하여매실의독특한향미를요리에가미할수 있으며, 소화촉진및 해독등 매실의약리효과를요리에부가할수 있다.

Through the present invention, it is possible to prevent unnecessary (不要) fermentation and rancidity in distribution, storage and use of matsul, to break the mere sweetener functions can tinge the unique flavors of plum cooking, digestion and detoxification including the pharmacological effects of plums can be added to the dish.
