    • Partial or total dealcoholization of wine and/or cider while preserving the taste and aroma of the product treated. The device used in this method comprises a vat (5) containing the liquid to be treated, a reverse osmosis unit (13) and a closed circuit between said above-mentioned elements to circulate the liquid to be treated through the unit and to bring it back to the tank. In this circuit are mounted a high-pressure pump (11) and means for the control and regulation of the pressure, temperature and flow rate in order to perform the dealcoholization process. Means (68, 63, 57) are provided to inject demineralized water free of chlorine in order to compensate for the loss of permeate. An ingredient vat (70) is provided to mix the ingredients which tend to render to the treated liquid its original taste and aroma. The invention is applicable to all liquids containing alcohol, particularly wine.

    • The invention provides devices for decreasing the ethanol content of wines and beers, methods using the devices, containers in association with the devices and alcohol-free and low-alcohol wines and beers produced using these devices and methods. The devices comprise an immobilised reagent which binds and/or chemically converts the ethanol. The reagent can be an antibody or an enzyme such as alcohol dehydrogenase, a microsomal ethanol oxidation enzyme system or catalase. Where enzymes are used the devices can also have immobilising components such as haemoglobin, albumin or polylysine to mop up an enzymic reaction product such as aldehyde.

    • In a process for the continuous manufacture of dealcoholized beverages, a substrate consisting of fruit or berry juice, grape must or wort is first preclarified and sterilized in a microfiltration installation (2) and then fermented by the fluidized bed process in a fermentation tower (3) by means of immobilized microorganisms. The carrier particles (12) maintained in suspension in the fermentation tower (3), to which the microorganisms are bound, ensure effective retention of the biomass. Following fermentation in the fermentation tower (3), the alcohol is removed in a dealcoholization device (24) from the raw juice, which is then clarified in an ultra- or microfiltration installation (27). The process, which is carried out continuously in a production line, permits particularly rational and productive operation of the installation.
