摘要： The invention provides a process for preparing a protein-polysaccharide conjugated product comprising: (a) preparing a mixture comprising pea protein, polysaccharide, and an appropriate polar solvent; wherein: the weight ratio between polysaccharide and protein is comprised from 20:80 to 60:40, and the pH of the solution is comprised from 8.0 to 10.5; and performing a Maillard reaction by heating the solution resulting from step (a) at an appropriate temperature for the necessary period of time to conjugate the protein and the polysaccharide. The invention further provides a conjugated product obtainable by the process of the invention, as well as pharmaceutical compositions comprising the conjugate and to their use in the treatment in gastrointestinal disorders. The conjugate of the invention shows a remarkable improvement in preventing and/or treating intestinal diseases, such as mucositis.
