摘要： The present invention relates to a package (100) for foodstuff, comprising: - at least one base film (1), - at least one closing film (10), - at least one food product (P) interposed between the base film (1) and closing film (10), wherein the food product (P) is disposed on an abutment area (5) of the base film (1), the closing film (10) being tightly fixed to the base film (1) at a sealing band (4) extending as a closed-loop around the abutment area (5), and wherein the food product (P) is housed in a packaging seat (6) defined between the closing film (10) and the base film (1) and delimited, at the base film (1), by said sealing band (4), wherein the base film (1) is configurable in : o at least one first operative configuration, in which the base film (1) is disposed flat, and o at least a second operative configuration, in which the base film (1) has a main sheet layer (11) disposed below the food product (P) and a plurality of auxiliary sheet layers (12) extending from said main sheet layer (11) and folded around said food product (P), wherein the base film (1) comprises at least one paper layer (2) and at least one plastic layer (3) overlapped and coupled to the paper layer (2), wherein the abutment area (5) of the food product (P) is defined on the plastic layer (3), wherein the closing film (10) is hermetically fixed to the plastic layer (3) of the base film at the sealing band (4). The vacuum skin packaging process of the invention comprises providing a tray loaded with a product said tray comprising a bottom wall, a side wall upwardly extending from said bottom wall and terminating in an outwardly projecting horizontal rim, said side wall comprising at least one hole; placing the product loaded tray in a vacuum chamber; positioning a film above the product loaded tray; forming an airtight contact between the film and the rim of the tray; evacuating air from above the film to bring it into contact with a heating platen to heat the film; evacuating air from within the tray through the at least one hole; introducing air from above the film pushing the film in contact with the product and welding it to the inner surface of the tray closing the at least one hole in the side wall characterised in that the film is held in contact with the heating platen while air begins to be evacuated from within the tray. Preferably the film is positioned above the product loaded tray is a discrete piece of film having the size of the tray thus reducing the amount of film which is scrapped during a vacuum skin packaging process.
