    • The oven of the present disclosure includes a cooking chamber within an enclosure. The cooking chamber has a support for holding a food product, a first heating element on a top side of the support, and a second heating element on a bottom of the support. A blower moves air from an intake chamber, over the first heating element, and through a perforated plate, where it contacts and heats the food product on the support. Air is returned from the cooking chamber to the intake chamber through a plurality of separate and distinct vents in a rear wall of the cooking chamber. The first heating element, the second element, and the blower can each be controlled independently of one another. The disclosure also provides a method of operating the oven.

    • An oven structure (10) that includes a housing (20) with an internal refractory surface and two heat diffusion walls (25 and 25') with apertures (26 and 26') at spaced apart and parallel relationship with respect to each other defining a centrally disposed baking chamber (24) and two combustion chambers (23 and 23'). Apertures (26 and 26') allow a predetermined amount of heat to pass through to baking chamber (24) without affecting the object being baked by direct contact with flames or other areas with excessive heat concentration. A uniform temperature is maintained within baking chamber (24) with the hot gases passing through apertures (26 and 26') to baking chamber (24) where high pressure is developed but the top with the hottest gases and push the mass of gases with a lower temperature down and into the exhaust system.

    • The present invention relates to a gas oven capable of providing vapor cooking through a simple and easy-to-implement constructive arrangement. Such a constructive arrangement is provided by a gas oven (100) for vapor cooking comprising at least: one inner cavity (105) provided with a useful portion by a user and capable of accommodating utensils and foods; storing means (101 ) capable of accommodating at least one kind of liquid; and heating means (103) associable to the storing means (101 ) and capable of raising the temperature of the liquid contained in the storing means (101 ) to provide the evaporation of at least a portion of the liquid, the storing means (101 ) being arranged integrally and fixedly in the useful portion of the inner cavity (105) or arranged integrally and fixedly below the base (107) of the inner cavity (105). Optionally, the storing means (101 ) is removably associable to the oven (100). The present invention further relates to a kitchen-range (200) comprising at least one cooktop and one oven (100) according to the above description.
