Certain aspects are related to the production of multiple liquid extract products using a single system by adjusting one or more displaceable fluidic pathway segments within the system to switch between first and second (or more) extraction configurations. In certain embodiments, a first liquid extract can be produced when the displaceable fluidic pathway segment is in a first configuration, and a second liquid extract (different from the first liquid extract) can be produced when the displaceable fluidic pathway segment in in a second configuration (different from the first configuration).

摘要： An upward flow extraction method, apparatus, and extract are disclosed. The upward flow extraction method can comprise loading extraction material into an extraction cell having a bottom portion and a top portion; introducing a first aliquot of extraction medium through the bottom portion of the extraction cell; expelling gas from the extraction cell through the top portion of the extraction cell; closing the top portion of the extraction cell and increasing the pressure in the extraction cell as extraction medium flows into the bottom portion of the extraction cell; stopping the flow of extraction medium into the extraction cell; steeping the extraction material in the extraction medium under pressure to produce an extract; and introducing a second aliquot of extraction medium through the bottom portion of the extraction cell to push extract through top portion of the extraction cell.

The coffee puck removal device (10) has an open compartment (22) containing the coffee puck (24), the coffee puck (24) having an exposed major outer face (26) and a major inner face (28) when the coffee puck (24) is located in the open compartment (22). The device (10) includes: a body (12) having a rim (14) surrounding an aperture (16), with the rim (14) being configured to engage the portafilter (20), with the open compartment (22) facing the body (12) to inhibit air passing between the portafilter (20) and the rim (14); and a vacuum source (30) to remove air from the aperture (16) so that air pressure applied to the major inner face (28) is greater than air pressure applied to the exposed major outer face (26) so that the coffee puck (24) is removed from the portafilter (20).

摘要： An espresso coffee dispensing machine includes a preheating boiler with temperature control, at least one hydraulic pump, and at least one dispensing assembly with systems for heating and temperature control of the water. The machine includes at least one balance for weighing the ground coffee in a filter and the dispensed product. Manual or electronic components for controlling the thermal power delivered within the preheating boiler and by the dispensing assembly are also included in the dispensing machine. The machine performs, following a rise in the temperature of the water, a pre-infusion and a post-infusion at constant pressure and for a preset volume of water calculated via a volumetric meter. Between pre-infusion and post-infusion, a brewing or infusion at constant pressure occurs wherein a presettable water volume is dispensed following calculation of the weight of the ground coffee in the filter and the product dispensed according to a brew ratio.

摘要： A beverage brewing device includes a lower container for receiving and heating water, a connected upper container for receiving beverage, and a piston-cylinder assembly for receiving grounds, captured within the lower container. The piston-cylinder assembly includes a cylinder, a piston movable in the cylinder, a conical diffuser fixedly attached to the piston, and a freely movable mass disposed between the piston and the conical diffuser. The piston and the conical diffuser define an expansion chamber therebetween. The chamber is formed between a diffuser plate forming the top of the piston and an inner conical surface of the diffuser, which defines an orifice functioning as a nozzle. The diffuser plate has a plurality of holes, on which the grounds are placed. The mass is seated at a valve seat at the entrance of the expansion chamber to operatively block the flow of fluid through the nozzle when the pressure of the fluid is insufficient to displace the weight of the mass. When water is heated in the lower container becomes pressurized sufficiently to pass through the nozzle and displace the seated mass from the valve seat, the water passes through the nozzle at relatively high pressure and velocity, and enters the expansion chamber at lowered pressure. It then flows through the diffuser plate, through the grounds, and into the upper chamber.

The automation of the cut off increases the consistency of compaction and reduces the amount of skill required to compact ground coffee for making espresso.
