    • An improved apparatus for processing sea cucumbers having stages for orienting/aligning, cutting, splitting, flattening, eviscerating and cleaning the sea cucumber, and for collecting the eviscerated innards. A method for the automated splitting and evisceration of sea cucumbers using the apparatus of the present disclosure. A flattening plate and trough during the orienting/aligning step relax the sea cucumber and discourage its defence mechanisms. A wedge shaped flattening plate splits and flattens the sea cucumber immediately after the incision. Pronged discs maintain positioning of the sea cucumber during an aggressive wash and brush cleaning cycle, which may be repeated. Optionally, a vacuum may suction off a portion of the innards prior to cleaning.

    • The present invention allows oval fish processing machinery designed to process pollock or salmon, such as the Baader 182, to be adapted to process flat fish such as sole to produce kirimi. One embodiment of the invention includes a generally rectangular fish holder that replaces the current fish holders on a fish processing machine. The fish holders include brackets having arms which extend over a portion of the fins and body of the flat fish to hold it in place on the fish holder. Two rotating blades cut through the flat fish held within the holder to remove the head and tail of the flat fish. Once the head and tail of the flat fish are removed, a water jet fish cleaning apparatus removes the blood spot and any internal organs remaining in the center portion of the flat fish to produce kirimi. The water jet fish cleaning apparatus includes a water jet nozzle that has one or more water passages. The passages direct a stream of water into the internal cavity in the center portion of fish. The stream of water from the water jet nozzle contacts and removes the blood spot of the fish. One of the passages directs a stream of water into the cavity approximately normal to the processing path. Another passage directs a stream of water partially forward along the processing path. In one embodiment, the water jet nozzle rotates to follow the center portion as it moves along the processing path.

    • Apparatus and method for subdividing a fish body into a loin-containing portion and a viscera-containing portion. The apparatus includes a carrier, a cutting assembly, and a runway connecting the two. The cutting assembly and a fish body supported on the carrier are advanced relative to each other along the runway. Blades at the cutting assembly flank the runway and form a pair of angled cuts intersecting to form a V-cut that opens toward the ventral side of the fish body. The planes of the blades are separated by an angle of between 80.degree. and 160.degree., depending on fish species and size, to minimize the amount of loin meat separated with the viscera. Means are provided for setting the tilt of the longitudinal axis of the fish body relative to the path of the vertex of the V-cut so that the path extends between the backbone of the fish and its visceral cavity substantially from the vent to a point on the outside surface of the fish body in the vicinity of the eyes. In this way, a wedge-shaped belly section containing the viscera and belly bones is cut from the remaining loin-containing sections of the fish body. The two sections are thereby made available for downstream processing at separate stations.
