    • A food treatment system having a frame, a receptacle having a peripheral wall defining a space for storage of a food item and an opening through which a food item can be introduced to the storage space, and a conditioning source for changing the state of fluid in the food treatment space defined by the frame. The frame has a first wall against which the receptacle bears with the receptacle in an operative position with respect to the frame. The frame has a second wall which is spaced from the first wall so that the first and second walls cooperatively define the food treatment space. The second wall at least partially blocks the receptacle opening with the receptacle in the operative position. At least one of the first and second walls is movable relative to the other of the first and second walls to vary the spacing between the first and second walls.

    • A banquet cart includes a heater received in an opening in the bottom panel of the banquet cart. Plates of food are loaded into the interior compartment of the banquet cart in the kitchen. The heater includes a central heater unit and two heat retention material heating panels. The central heater unit heats the interior compartment of the banquet cart for twenty minutes. The central heater unit is turned off, and smaller heaters are turned on to heat the heat retention material heating panels for forty minutes. The smaller heaters are turned off and the banquet cart is rolled from the kitchen to a hallway proximate to the dining area for serving the plates of food to guests. The heated heat retention material heating panels can maintain the temperature of the air in the interior compartment of the banquet cart warm for approximately two hours and forty minutes, keeping the food in the banquet cart warm.

    • An improvement in a drawer of the type having a bottom wall and a peripheral wall structure extending upwardly from the bottom wall and defining in conjunction therewith a storage space. The peripheral wall structure has a front wall, a rear wall and first and second laterally spaced side walls, each extending between the front and rear walls. The improvement resides in each of the side walls being a single piece and having an integrally formed guide slot for cooperation with spaced elements on a cabinet with which the drawers are associated. The spaced elements move in the slots and support and guide sliding movement of the drawer. In a preferred form, each of the guide slots has a laterally opening, U-shape in cross section and the guide slots on each drawer open laterally away from each other. Preferably, the drawer is used in combination with a cabinet bounding a storage space and having an opening in its front wall to permit selective movement of the drawer into and out of the space. In a preferred form, laterally spaced guide elements are provided on the cabinet for reception in the guide slots. Each guide element comprises an elongate rail, preferably made from a plastic material such as DELRIN.

    • A microprocessor controlled food treatment/holding apparatus has a cabinet which defines a storage space for food to be treated at a predetermined temperature and relative humidity within said storage space, a heater with a surface that can be heated to a temperature which is sufficient to boil water for a predetermined length of time, and a controlled solenoid for delivering a plurality of preselected amounts of water against the heater surface according to the length of time a cabinet door is opened. Detailed operating parameters for the storage space of the temperature and relative humidity conditions are maintained in suitable memory and polled by the microprocessor during operation of the apparatus as real-time data from remote sensors are sent to the microprocessor, which controls the monitoring system of the apparatus. Separate and independent control logic exist for an initial pre-heat mode of operation, as well as for a normal operating mode of the apparatus for the cabinet door being opened and for the cabinet door being unopened for an extended period of time. Also disclosed is a method for controlling the temperature and relative humidity of a storage spaced within a cabinet apparatus used for treating and holding prepared food prior to serving.
